Thai green curry is the most popular dish in the Thailand and also in rest of the world. In Thai language it is known as âGaeng Keaow Wanâ means sweet green curry. It is easy to cook and cheaper to buy. You can make it sweet and spicy according to your requirement. You just need heat up the coconut milk or cream then add the paste, salt, sugar and other ingredient like vegetables, chicken or seafood. Thai green curry is made from green curry paste. You can purchase this curry paste from market but it does not give good taste so if you want to eat original Thai green curry then there is only one type of genuine curry paste prepared at home, which is made from scratch using herbs and fresh ingredients, then grind it with mortar and pestle.
If you want to prepare Thai green curry in the way Thai cooking then firstly you have to prepare basic curry paste, for this you need fresh coriander seeds, coriander roots, cumin, peppercorns, lemongrass, zest of lime, garlic, green chillies, black paper, piece of galangal, peeled and chopped them, shallots and shrimp. Heated up these dry ingredients in a pan then grinned into powder using a mortar and pestle also you can use the grinder this will save your time. Use the food processor to process all the ingredients together to make a thick paste so that you don’t want to make this paste every time to cook curry, you might store some in the fridge, so every time when you need to cook curry, you just add the paste with coconut milk and other ingredients to cook Thai curry. This green paste can be stored for about 3-4 weeks in the refrigerator and about 3-4 months in the freezer.
After preparing paste pour some oil in the pan and heat enough until it seared when splashed with water. After that add this curry paste in it and stir it to avoid burning of paste. After half a minute stirring add the coconut cream and the chicken in it. Cook until chicken is completely cooked. By now a thick sauce is prepared. Turn the heat down then add the eggplant, chopped kaffir lime leaves, a dash of fish sauce, the sugar and finally the coconut milk. Keep it at on medium heating for a few minutes to blend all the flavors and ensure that chicken is cooked properly.
You can add more fish sauce, salt, sugar etc to get the taste you want. You can add more curry paste or chillies to make it more spicy or more coconut milk or cream to make it sweet. Once everything is cooked then you remove it from the cooking heater and pour into serving bowl. Garnish with sweet Thai basil leaves and serve with rice, noodles and jasmine. You can also serve Thai green curry with Thai fishcakes. Thai fish cakes is very common and flavored food of Thailand.
